- Cook rice according to package directions. Spread on a plate to cool.
- Heat sesame oil in a wok over high heat.
- Whisk eggs and scramble them in the wok. Remove and set aside.
- Add minced garlic and mixed vegetables. Stir-fry for 2 minutes.
- Add the cold rice and soy sauce. Stir-fry for 3 minutes.
- Return the scrambled eggs and toss everything together. Serve hot.
